The Goal: Brew a Modern West Coast IPA with 50% less dry hopping.

The Process

1. Fermentation with LAX Yeast

Fermentation followed standard brewery practice, with LAX yeast from WHC Labs (Dublin).

2. Reduced Dry Hopping

A light dry hop was applied using Motueka and Simcoe T90, achieving the desired fruity, piney and floral character while using 50% less dry hop compared to the original recipe.

3. Yops® Dosage Post-Fermentation

Yops® was dosed post-fermentation at 100 ml/hL, using the blends Floral-F2, Fruity-FR1, and Hoppy-H2 to enhance and balance hop aroma while supporting a reduced dry hopping regime.

4. Dosage & Homogenization

Yops® was pre-diluted in a mixing tank and dosed via a metering/dosage pump into the beer. Homogenization was achieved through recirculation or rousing, ensuring even distribution.

5. Maturation and Flavor Integration

After dosing, the beer was allowed to rest to enable full integration of hop aroma and flavor, resulting in a punchy and expressive final profile.

6. Packaging (No Pasteurization)

The final beer was packaged without pasteurization, preserving hop intensity while maintaining product quality.

The Results: Stronger aroma push with 50% less dry hopping - plus a 12% yield boost.

The Beer: A Modern West Coast IPA 6% ABV

This Modern West Coast IPA blends old-school attitude with next-gen flavor. Classic Simcoe and Motueka hops lay down pine, citrus, and firm bitterness, while Fruity, Floral, and Hoppy Yops® push the aroma straight out of the fermenter.

In the glass, it’s bright and expressive: sweet tangerine, crisp citrus, layered florals, and a light, clean body. The finish snaps back with classic West Coast bitterness.
