As frontrunners in bioscience innovation, we are reinventing the production of natural flavors by mirroring nature and the processes inside plants. This approach allows everyone to enjoy remarkable flavors without depleting nature’s resources. These ingredients, known as monoterpenes, are microscopic molecules that captivate the senses through the nose, mouth, and throat. Though invisible to the eye, they play a vital role in the delightful flavors and aromas of everything we eat and drink.

Story

The wonder of scents

Founded in Denmark in 2021, Evodia is built on unique scientific discoveries made by our team at the University of Copenhagen. Through groundbreaking technology, we have unlocked previously inaccessible molecules for bio-industrial production, enabling us to create natural aromas sustainably.

Our proprietary yeast strains convert simple sugars at high yields into desired aromatic compounds—monoterpenes—making it possible, for the first time, to produce these volatile molecules on an industrial scale.

Our name, “Evodia,” meaning “pleasant scent” in Greek, is inspired by the heritage of one founder’s grandmother, who used herbs for food and medicinal purposes. We have built our own production facility, labs, and offices near Copenhagen to support our vision of a sustainable future where everyone can enjoy natural flavors and aromas without depleting natural resources.

2019

A groundbreaking discovery

At the University of Copenhagen, our co-founders, Simon and Sotirios, explore innovative ways to produce aroma compounds, leading to a groundbreaking discovery in sustainable flavor production.

2021

A company is born

After extensive research, the first patent is granted and Evodia is born. The patented technology improves production efficiency by a hundredfold compared to other biotechnology methods, bringing sustainable aroma molecules within reach.

2021-22

Our potential is recognized

Chosen for the prestigious BioInnovation Institute’s Venture Lab program of the Novo Nordisk Foundation, we receive a EUR 500,000 convertible loan. In 2022 we join the Venture House Program with an additional EUR 1.3 million convertible loan.

2022-24

Funding is forthcoming

We secure EUR 6.4 million in a funding round led by an international syndicate of investors, including Symrise, Nordic FoodTech VC, PINC - the venture arm of Paulig from Finland, Thia Ventures VC, and Newtree Impact from Belgium. In 2024, we raised an additional EUR 7 million, with participation from all current investors and new support from EIFO, The March Group, and Ananke Ventures.

2023

A place of our own

We begin constructing our own production facility, laboratories, and offices near Copenhagen. This expansion marks a new chapter of growth, with more team members joining to support the company’s vision.

June 2024

Our first product hits the market

We receive production approval, and officially launch Yops™ to breweries. This milestone enables Yops™ to reach brewers globally, providing a sustainable solution to enhance beer flavors.
